After tasting the dessert, the noblewoman was so enthusiastic that she shared the recipe.

Another story claims that the recipe for chocolate-covered eggplant has its roots in an ancient monastery in Tramonti, where some monks came up with the idea of frying eggplant and seasoning it with Concerto liqueur—made with anise and cinnamon, typical of the area. Over time, the liqueur was replaced by dark chocolate, creating a perfect combination of flavors that makes the eggplant an irresistible dessert. Chocolate-coated eggplant is usually served with a small glass of Concerto liqueur to highlight the flavors of the Amalfi Coast.

Finally, a third legend suggests that this recipe dates back to World War II, when the Americans landed with supplies of chocolate and the farmers of Campania, using their ingenuity, transformed the eggplant into a “sweet parmigiana.”
